“Coming from Kerala, my style of cuisine is obviously influenced by my home cuisine, but Kerala is not just one style, it is a melting pot of cultures, from Syrian Christian, to Muslim, Hindu to Anglo-Indian. Working throughout India in my formative years exposed me to all kinds of Indian cuisine under the sun, and then working in London at a Michelin star restaurant, helped me fine-tune my style. I have travelled throughout India many times, for my book and other projects and am always learning about new dishes, it is a constant influence. But, if you were to pin me down, I would say my style is to create fresh modern twists on traditional Indian cuisine”. – Anand George
In the last 17 years, chef Anand George has transformed the South Wales food scene, not only by refining Indian cuisine but also introducing cutting-edge flavours, textures and presentation. From the Novelle cuisine of Purple Poppadom in 2011, Food truck in 2016, to permanent outlets in Cardiff Market, Swansea, Caerphilly and Goodsheds.
Everything in their kitchen is made fresh in-house—no additives, no shortcuts, and no store-bought curry pastes.
Their spices come straight from India, freshly ground and perfectly tempered for maximum flavour.
Alongside the very infamous Kerala Fried Chicken, you can also find Bombay Fries, Loaded fries, Chicken Tikka / Paneer Tikka/ Vegan dishes and more – all perfectly paired with a bottle of Cobra beer!
